Profile & Story
Kapistoni is a family winery run by the Chochishvili family in Saguramo, in Georgia's Kartli region, where seven generations have carried on the country's 8,000-year-old qvevri winemaking tradition. Their vineyards sit within a certified eco-zone and are farmed without synthetic chemicals, and every wine is made the traditional way in qvevri, without filtration or additives. This bottling is made from 100% Shavkapito, a rare indigenous red grape grown in the Vaziani microzone of Kartli.
Tasting Notes
A medium-bodied dry red with primary aromas of wild cherries and ripe wild strawberries, layered with crushed red peppercorn, violets, sweet quince, and wild rose petal. The palate is powerful and energetic, with red currant, blueberry, and pink peppercorn carrying through to a long, lively finish. Restaurant's Notes: Made with hand harvested organic grapes and vinified in Qvevry, this Shavkapito explodes with aromas of wild berries and red peppercorns, interwoven with delicate floral notes of violet and rose. The palate is both powerful and elegant, showcasing vibrant red fruit flavors and a long, energetic finish
