Profile & Story
Milan Nestarec is one of Moravia's best-known natural winemakers, exporting the large majority of his production abroad. Hedonista began as a suggestion from his longtime Prague distributor and is built as a solera-style blend across multiple vintages (currently 2021, 2022 and 2023), based on Grüner Veltliner along with Welschriesling and Neuburger. The wine undergoes a soft, whole-bunch fermentation with gentle skin maceration rather than a hard press, and the blended vintages age together in large old barrels. The vineyards are certified organic by ABCERT.
Tasting Notes
An inviting orange wine with honey and wildflower aromas joined by buttery, caramelized notes, opening onto amber and resin tones on the palate with vibrant apricot acidity. Restaurant's Notes: Grüner Veltliner, Welschriesling, Neuburger grapes are hand-harvested and sorted by hand. Left to macerate on the skins in open vats for three days. Spontaneous fermentation, followed by slow and gentle pneumatic press. Aged in 3000L Gamba barrel, Solera of 2021-2023 vintages. Unfined, unfiltered, 5mg S02 added at bottling. Bottled in March 2024
