Pierre-Olivier Bonhomme farms around nine hectares organically across Monthou-sur-Bievre, Cellettes and Valaire in the Loire's Cheverny and Touraine appellations, working across a wide range of grape varieties. The Sauvignon Blanc ferments spontaneously in a mix of stainless steel and concrete and is bottled unfined and unfiltered with minimal added sulfur.

Tasting Notes

Dry and richly textured with lively acidity, opening with flint, toffee and savory herbs before bright citrus, arrowroot cookie and a saline mineral finish. Restaurant's Notes: Grape Sauvignon Blanc. Brimming with incredible minerality, the light, zippy lime citrus palate is balanced with impeccable salty & savory notes
