Profile & Story
Pisador is a small-batch project in Chile's Maule Valley from Elena Pantaleoni, owner of La Stoppa in Emilia-Romagna, together with Nicola Massa. In the south of the Maule Valley they farm four hectares of ungrafted, dry-farmed País vines over a century old, planted on granitic soils. The grapes are hand-destemmed and foot-trodden — pisar means to tread by foot, which gives the wine its name — before spontaneous fermentation and a long maceration. The wine is bottled without filtration and without added sulfites.
Tasting Notes
A rustic, structured red with blackberry, plum, and raspberry fruit, lifted by notes of rose and cracked black pepper. Restaurant's Notes: Grape Pais. On the nose, it is broad and intense; It expresses itself with hints of red fruits, notes of thyme and fresh mint, and hints of tobacco leaves and white pepper. On the palate, it is soft and enveloping, with a velvety tannic texture and a pleasant persistence
