Christoph Heiss, who has winemaking experience in New Zealand, Germany and South Africa, farms in the eastern Kamptal. Hotrot Malinga blends St. Laurent (50%), Rotberger (40%) and Muller-Thurgau (10%) from vines 20-40 years old across three vineyard sites (Loh, Ganslgraben and Tellern); the grapes are foot-crushed as whole clusters and fermented with wild yeast in stainless steel, aged five months on the fine lees, unfined, unfiltered and made without added sulfur.
