Winemaker Elisabetta Montesissa farms biodynamically in Emilia-Romagna, treating the whole property as one ecosystem. Bonissima blends Malvasia di Candia Aromatica and Ortrugo: the grapes are pressed immediately, then macerated on the skins for about 15 days before the wine is bottled with its own residual fermentation sugars, which reactivate in bottle to create natural effervescence.
