Profile & Story

Cidrerie du Vulcain is the project of Jacques Perritaz, a former biologist who began making cider and perry from abandoned, forgotten orchards around Fribourg, Switzerland in the early 2000s and became one of the most respected names in artisanal cider. In 2022 Perritaz established a second estate in the Domfrontais, the historic heartland of French perry (poire) production in Normandy. Poire Comment is made from late-season perry pear varieties (Plant de Blanc, Fausset, Cloche, Gaubert, Courcou, Rouge Vigne) harvested between late October and December; the pure perry juice ferments on its own wild yeasts and is coarsely filtered on white clay before two years of bottle aging and disgorgement.

Tasting Notes

Lightly sparkling and off-dry, with fresh and candied-pear notes, a floral lift and citrus brightness; hazy in the glass, with a gentle, refreshing character rather than a sweet one.
