Ryujin Shuzo is a small, family-run sake brewery in Tatebayashi, Gunma Prefecture, tracing its roots to the late 16th century, when local legend holds that a warlord discovered an underground spring of exceptionally soft water, later named for the dragon deity Ryujin. The brewery's small team mills its own rice and cultivates its own yeast in house. "Dragon God" Junmai Daiginjo Namazume is brewed from Yamadanishiki -- widely regarded as sake's finest rice variety -- polished to 50% (daiginjo grade), and bottled namazume: pasteurized once before a year of aging rather than the usual two pasteurizations, skipping the pre-bottling step for a fresher, more vivid character.

Tasting Notes

Elegant and refined, with notes of fennel and fresh almond alongside floral, bright citrus-fruit tones and a smooth texture (SMV +1.0, acidity 1.4, ABV 15.5%).
