Weingut Familie Bauer is run by Josef Bauer and his wife Eva Maria in Grossriedenthal, in Austria's Wagram region, where they farm organically and keep green cover crops of native flora between the vines to support biodiversity. Hollötrio is an orange Grüner Veltliner from the Kronberg vineyard, on drifted loess at 325 to 335 meters. It is made in two parts: most of the grapes spend five hours on their skins before pressing, while the rest are crushed and left on the skins for 30 days. Fermentation is spontaneous with ambient yeasts and without malolactic, followed by four months in stainless steel, and the wine is bottled unfiltered in one-litre bottles.
