Hollotrio is made by Weingut Familie Bauer, a certified-organic estate run by Josef and Eva Maria Bauer in Grossriedenthal in the Wagram. The Gruner Veltliner is sourced from the Kronberg vineyard, planted in 1988 and 1999 on loess soil, and split-vinified: eighty percent sees just five hours of skin contact before pressing, while the remaining twenty percent macerates on its skins for thirty days, both fermenting spontaneously in stainless steel.
