Caves Blancher was founded in Sant Sadurni d'Anoia in 1955 by Antonio Capdevila Pujol and Teresa Blancher Solanes and is run today by the family's third generation; the cellar sits in the centre of town over five floors, three of them underground and built with the traditional Catalan vault, and the house makes only reserva and gran reserva cavas. Launched in 1980 as Brut Grapa and now called Reserva Especial, it is one of the firm's most emblematic cavas: Macabeo, Xarel-lo and Parellada fermented in stainless steel, held in contact with their fine lees and aged more than 25 months in bottle on the property. 11.5% alcohol.
Tasting Notes
Yellow with golden reflections and a fine, persistent bubble. The nose is fine, with aromas of ripe fruit, notes of pastry and a background of almond. Fresh in the mouth, with a long and balanced finish.
Pairing Recommendation
Caves Blancher suggests it with all types of dishes, and especially with pasta in sauce and risotto.
