Bodegas Barbadillo draws Obispo Gascon from its centenary soleras. Palo Cortado is among the most special categories in the Jerez-Xeres-Sherry Denomination of Origin: although the wine goes through the physical-chemical oxidative ageing used for oloroso, the result is not an oloroso, and its organoleptic character sits somewhere between an oloroso and an amontillado. The house describes this Cortado as having one foot in biological ageing and the other in oxidative ageing. 100% Palomino Fina, 21.5% alcohol, served at 13 to 14C.

Barbadillo suggests it traditionally with fresh tomato dishes, and in a more contemporary register with chicken teriyaki.
