Bodegas Chaves was founded in 1955 by Jose Chaves in Val do Salnes, on the Atlantic edge of Galicia, and has passed from father to son through three generations. In 1986 it was among the first wineries to market wine under the Vinos de la Tierra designation, guaranteeing the origin of Salnes Albarino, and it was the second winery entered in the DO Rias Baixas register. Castel de Fornos is the family's flagship, named for its first vineyard on the stony, dry hillside of Fornos that their forebears called castel, where the average vine age is around 70 years. It is 100% Albarino, made only from the mosto yema, the free-run juice of the first gentle pressing, and fermented at a controlled 16C in stainless steel to preserve the variety's aromatics. 13% alcohol, 6 to 6.5 g/l total acidity, 1.5 to 3 g/l residual sugar.
Tasting Notes
Clean and bright, lemon yellow with greenish highlights. Good aromatic intensity, with white flowers (gardenia, orange blossom), pome fruit (pear, apple) and citrus (lemon). Smooth and enveloping in texture, the varietal citrus and orchard fruit accompanied by white flowers and mineral notes, well balanced with refreshing acidity and a delicate, lingering finish.

Bodegas Chaves pairs it with grilled razor clams, setting the wine's freshness against the briny shellfish.
