Bodegas Emilio Hidalgo was founded in 1874 and has built an international reputation for elegant, refined sherries; the bodega occupies a late-19th-century building in the historic heart of Jerez de la Frontera, its thick walls, large windows, high ceilings and tiled roof ideally suited to fermenting and ageing sherry. Gobernador is a dry Oloroso of around twelve years. Because the house is family-run it prefers to let nature take its course: once it is determined that flor is not forming on a cask of new Palomino, those barrels are classified as Oloroso and, without the protective veil, begin a slow natural oxidation that gives the wine its nutty aromas and deep amber colour. 100% Palomino.
