Heretat Sabartes is a Penedes estate whose Brut Rosado cava is drawn from Pinot Noir grown in the vineyards immediately surrounding the winery, with a small share of Garnacha (90/10). Only the flower must, roughly half the total, is used. The grapes macerate in press at low temperature to draw the variety's colour and personality, settle statically for 24 hours and ferment in stainless steel vats at 16C; the second fermentation takes place inside the bottle by the traditional method, followed by around 20 months ageing in stacks. 11.85% alcohol, 6.3 g/l residual sugar, 3.70 g/l total acidity.
