Tio Diego is Valdespino's flagship dry Amontillado, made from 100% Palomino Fino sourced from the historic Pago Macharnudo Alto vineyard, with vines over 25 years old. It lives as a Fino under flor for roughly eight years before the wine is fortified further and moves into an oxidative ageing stage, developing its characteristic nutty depth.
Tasting Notes
Elegant and richly nutty, showing dry roasted almond and hazelnut over a saline, savory backbone left from its years under flor. Bone dry on the palate with real length and precision.
