Grosjean traces four hundred years of mountain winemaking in Italy's Valle d'Aosta and became the first estate in the region to earn organic certification, in 2011. Vigne Rovettaz comes from a half-hectare of Cornalin — a local variety distinct from the Cornalin of Switzerland's Valais, where the same name refers to Humagne Rouge — planted on a steep, south-facing slope of sandy glacial moraine in the village of Quart; the destemmed grapes ferment spontaneously in tronconic wood vats for two weeks before eight months aging in foudre.
