Vincent Couche took over his family's Champagne estate in the Aube's Côte des Bar in 1999 and rebuilt it from the ground up, replanting under the guidance of terroir specialist Claude Bourguignon and converting to biodynamics — his domaine and cellar together were the first in Champagne to earn combined Demeter certification. Voulez Vous Couche Avec Moi? blends 69% Pinot Noir and 31% Chardonnay from fifteen-year-old vines on clay and limestone soils across Montgueux and Buxeuil; the wine is fermented with native yeasts, aged between six months and four years in a mix of oak barrel and tank, then rests a further year on its lees before disgorging with zero dosage and no added sulfur.
