Profile & Story

2021 was an exceptional vintage in Napa Valley with ideal weather conditions leading to optimal ripening for Cabernet Sauvignon grapes. We were able to allow the grapes ample hang time for complex flavor development, while keeping sugars at a reasonable level and retaining excellent natural acidity. Beckstoffer Vineyard Georges III performed very well in 2021 due to favorable weather conditions and meticulous farming. This Beckstoffer Heritage vineyard is the former Beaulieu Vineyard No. 3, which was originally planted by Georges de Latour of Beaulieu in 1928. The property is located adjacent to the Caymus Winery between Conn Creek Road and Silverado Trail in Napa Valley.

Tasting Notes

This is an intense Cabernet Sauvignon with depth and concentration, offering explosive dark fruit aromas. It is a collector’s vintage that will stand out in any cellar. The 2021 growing season offered optimal conditions in Napa Valley to harvest grapes of exceptional quality. Brief heat waves in August and September ripened the grapes to ideal maturity as the weather stayed dry until major rains arrived October 22, after our grapes were harvested. Yields were lower in 2021, with small berries and loose clusters creating wines of increased depth and concentration. The acclaimed Georges III F Block was stunning in 2021, delivering rich tannins and robust red fruit flavors. Two other blocks were blended in, adding complexity and layers to the texture of the wine. Each component was fermented separately and aged in the finest French oak barrels from master coopers such as Darnajou, Taransaud, and Sylvain.

Pairing Recommendation

Pairs well with rich, fatty foods that complement its tannins and bold flavors, such as grilled steak, lamb chops, and braised short ribs. Other excellent pairings include hearty stews, mushroom risotto, aged cheeses like cheddar or Gouda, and dark chocolate for dessert. Grilled steak: The high tannins in Cabernet Sauvignon cut through the fat of cuts like ribeye or filet mignon. Roasted or grilled lamb: The richness of lamb is a classic match for this wine. Braising short ribs: The slow-cooked, tender meat works well with the wine's structure. Gourmet burgers: A juicy burger is a perfect partner for Cabernet's bold profile. Venison or wild boar: These game meats have enough flavor to stand up to the wine. Mushroom risotto: The earthy flavors of mushrooms and creamy texture of the risotto are a great match. Aged cheeses: Aged cheddar, Gouda, and blue cheese have enough intensity to stand up to the wine. Dark chocolate: High-quality dark chocolate is an excellent pairing, complementing the wine's fruit and tannin notes. Insider Tips: Don't pair with spicy food: The alcohol content of Cabernet can make spicy food taste even hotter. Avoid light dishes: Lightly flavored dishes will be overpowered by the boldness of the wine.
