Calabretta farms on the northern slope of Mount Etna at Passopisciaro, working very old vines with native-yeast fermentations and long, unhurried elevage. This Carricante comes from roughly 80-year-old vines; the fruit sees a short skin maceration before fermenting with native yeasts, and the wine then ages 24 months in steel.
Tasting Notes
Volcanic-influenced notes of yellow fruit, fresh-cut herbs and crushed rocks, over a layered and refreshing palate; aromatic and mineral-laden, a salty Italian white.
