Profile & Story
Domaine de l'Ecu in Muscadet has been organically farmed since 1975 and Demeter-certified since 1998. Classic is 100% Melon B from a 40 hl/ha yield, harvested entirely by hand. Fruit is received by gravity with no pumps and pneumatically pressed; fermentation is 100% natural yeast and the wine ages on its lees in underground vats covered with glass tiles. No fining and no filtration.
Tasting Notes
Crystal clear, yellow straw in colour. The nose shows lime, grapefruit, white fruits, pear and apple with salty citrus notes. The palate is rich and straight with good acidity, delivering lime and soft notes of the sea, and the freshness carries through the finish.
Pairing Recommendation
Seafood platter, oily fish, white meat, or as an aperitif; suggested dishes include crispy fish burger, grilled salmon, tuna tartare, fried salmon with wok vegetables, and oysters. Serve at 9-11 C.
