Celler 9+ is an organic winery founded in 2010 in La Nou de Gaià, in the Tarragona region of Catalonia, just a few kilometers from the Mediterranean coast. Winemaker Moisès Virgili i Rovira farms all 35 hectares of the estate organically, and the vineyards benefit from the warm, mild coastal climate and the constant sea breeze known as La Marinada, which helps the grapes ripen evenly while staying healthy. 1r Escumosos is an intense, expressive organic sparkling wine made from the estate's beloved Cartoixà (Xarel·lo) grape. The grapes are destemmed and pressed, and the must rests for 24 hours in stainless steel tanks before the clear must is separated and fermented for 15 days at 14-15°C. The wine then undergoes its second fermentation in bottle, aging a minimum of 15 months with no dosage, sulphites, preservatives or clarifying agents added — a true brut nature.
