Made from 100% Moschofilero from the privately-owned Perpatiara vineyard (Arcadia, 720m altitude, clay loam soils, 12 t/ha yield). Early-harvested and pressed whole-cluster, fermented in stainless steel at low temperature, then secondary fermentation in bottle via the traditional method, aged on lees 9-12 months before disgorgement. Production: 60,000 bottles.
Tasting Notes
Light lemon-green color and fine bubbles; nose of citrus flowers and honey, with a touch of brioche and rose notes; palate shows notes of yeast and baked toast complemented by crispy acidity.
Pairing Recommendation
Raw seafood, sushi, soft cheese, and fruit salad.
