'Nykteri' references the traditional practice of harvesting grapes at night to preserve freshness in Santorini's heat. Blend: Assyrtiko 95%, Aidani 3%, Athiri 2%, from vineyards near Akrotiri and Megalochori. Short pre-fermentation cold maceration, must moved into French oak barrels for full fermentation, then 4 months maturation on fine lees with bâtonnage. ABV 13.5%.
Tasting Notes
Bright yellow color with golden tones, elegant aromas of lime and magnolia flowers, citrus jam and mastic with herbal thyme/sage notes, mineral hints. Full body, oily texture, high acidity, long aftertaste of wood, roasted coffee, vanilla.
Pairing Recommendation
Oily fish, creamy pasta sauces, aged cheeses, smoked eggplant dip, mushroom risotto, poultry.
