Silva Wines founded 1998 by Irini Daskalaki-Xenogiannaki in Siva village, Heraklion, Crete, continuing a family viticultural tradition since 1920; 90 privately-owned acres, integrated organic methods up to 500m altitude. Pre-fermentative maceration 4-6h at 10C, fermented in stainless steel at 15C with wild yeasts, short aging on fine lees. Soil: clay limestone, sandy.
Tasting Notes
Bright lemon color with a bouquet of citrus and stone fruit, alongside floral aromas, giving way to a more complex and mineral character. Excellent balance between finesse and acidity.
