Kameman Shuzo has brewed sake for over a century in Tsunagi, Ashikita District, Kumamoto Prefecture. This Genmaishu is a rare pure-rice sake brewed from unpolished brown rice at a 100% milling ratio, using the pesticide-free Hanageshiki rice variety grown locally in Tsunagi; rather than polishing away the outer layers of the grain as most sake production does, the brewery ferments the whole brown grains, giving the sake a concentrated depth and aromatic richness distinctive within Japan's sake industry.
