Profile & Story

Kikusui Shuzo was founded in 1881 in Shibata, Niigata Prefecture — one of Japan's leading rice-growing regions — by the Takasawa family, and is now led by its fifth-generation president. J-Draft is an unpasteurized, undiluted (nama genshu) junmai sake made from 100% Niigata rice milled to 70%, packaged in a can that Kikusui says protects the delicate, freshly pressed sake from light and air.

Tasting Notes

Kikusui describes J-Draft as full-bodied and richly smooth, with a balance of acidity that keeps the sake from feeling heavy, placing it toward the complex, moderately dry end of their taste map.
