Manuel Aragón named this Amontillado "El Neto" after his cart driver, a gesture the winemaker described as reflecting his respect for all of his workers. El Neto undergoes biological aging under a veil of flor for a minimum of five years, developing the dry character typical of Amontillado, followed by at least twelve years of oxidative aging that darkens the wine and adds concentration and complexity.
