Commanderie de Peyrassol traces its origins to the 13th century, when the Knights Templar established the estate in the foothills of the Massif des Maures in Provence; since 2001 the roughly 850-hectare property has been owned by Philippe Austruy, who has focused it on producing wines from clay-limestone soils sheltered by a natural cirque. This accessible rosé, sourced from IGP-classified vineyards around Coudonnier, is made from Cinsault, Grenache, Syrah and Caladoc: destemmed and pneumatically pressed, given a four-hour cold settling, fermented in temperature-controlled stainless steel, and aged briefly on fine lees before light filtration for a classic Provençal style.
