Stefano Zoli makes Verdicchio in Matelica, a valley in Italy's Marche region set among the Apennine Mountains, where ancient chalky soils, wide day-to-night temperature swings, and clear mountain air favor Verdicchio grown at altitude. His stated aim is wines that are sincere, vibrant and lively, sought through low-intervention winemaking — hand-harvesting, only minimal sulfur and copper treatments, wild-yeast fermentation in steel and concrete, and six months of aging on the lees before bottling. This Verdicchio di Matelica DOC is 100% Verdicchio, grown at 380–470 meters, with alcohol around 13–14% and total acidity of roughly 6.7–7.7 g/L.
