Ilatium Morini — printed on this menu as 'Lativm' — is based in Mezzane di Sotto in the Illasi Valley, in the heart of Verona's Valpolicella. 'Campo dei Ciliegi' is a Valpolicella Superiore Ripasso of Corvina, Corvinone, Rondinella and Croatina, briefly re-fermented on Amarone pomace for added complexity, from vineyards averaging fifteen years old on calcareous-clay soils above 200 meters.
Tasting Notes
Valpolicella Ripasso is typically deep ruby to garnet, with aromas of dried cherry, raisin and baking spice from its brief refermentation on Amarone skins; the palate is fuller-bodied than standard Valpolicella, with soft tannins and a warm, spiced finish.
