A. Margaine is a practicing-organic grower-producer in Villers-Marmery, a Premier Cru site in the Montagne de Reims, chalk and clay soils. Le Demi-Sec blends 86% Chardonnay, 14% Pinot Noir, about a third from the most recent harvest and the rest reserve wine, fermented/aged in stainless steel 18 months on lees with partial (67%) malolactic, 32 g/L dosage.
