Salad Days is one of the flagship sparkling wines from Field Recordings, the Paso Robles winery run by Andrew Jones, who has built the operation into arguably California's largest pét-nat producer. It is a blend of Colombard, Chenin Blanc and Chardonnay sourced from certified-organic California vineyards, spontaneously fermented in stainless steel for 45 days before a second fermentation in bottle with organic sugar as the tirage liqueur; the wine is left undisgorged.
