Profile & Story

Case Paolin is a certified-organic estate on the Montello hillside in Volpago del Montello, in the northern part of the Treviso province, founded by Emilio Pozzobon in the early 1970s and now run by his sons Diego, Adelino, and Mirco. This Col Fondo was created to revive Emilio's own traditional method of making Prosecco. Fruit is hand-picked from the estate's oldest vineyard (about 30 years old) and macerated on the skins for 15-18 hours before a first fermentation in steel with indigenous yeasts. After 3-4 months, the wine undergoes tiraggio (second fermentation in bottle) following classic-method practice but without disgorgement, so the wine retains its lees. Zero grams/liter residual sugar; 100% Glera.

Tasting Notes

Straw yellow with a natural cloudiness from the retained lees. The nose shows yellow fruit of good intensity along with floral and yeasty notes and a firm mineral sensation; the palate is dry, balanced, with persistent minerality and a fine, evanescent mousse. Producers recommend gently inverting the bottle two to three times before opening to resuspend the lees. Serve at 8-10°C. (Source: Case Paolin estate website.)
