Profile & Story

Wild Arc Farm is run by Todd Cavallo and Crystal Cornish, who left Brooklyn tech careers in 2016 to farm a former homestead in Pine Bush, in New York's Hudson Valley, practicing regenerative permaculture and biodynamic viticulture. The Clos de Cochon Riesling comes from a small organically farmed vineyard on Cayuga Lake (Finger Lakes) owned by Joe Sepe — a former pig pasture and manure dumping ground ('Clos de Cochon' = 'pig's enclosure') left fallow for years before Riesling (Geisenheim Clone 239) was planted. Whole-cluster fruit is macerated 24 hours, pressed into neutral French oak puncheon/barrel, aged roughly 10 months, unfined, unfiltered. ABV around 11%.

Tasting Notes

Vivid stone-fruit and lemon aromas; malolactic fermentation softens the acid and adds roundness and a fuller body, giving a cuvée with a rounded, generous finish — one of the more expressive, exciting wines in Wild Arc Farm's Riesling range.
