Champagne Bollinger, founded in 1829 in Ay, is one of Champagne's most storied grande marque houses, long associated with pinot noir-driven, structured wines. Special Cuvee is the house's signature non-vintage blend, drawn from more than 300 crus (85% grand and premier crus) and built around a majority of reserve wines aged in magnum for added depth. The blend is roughly 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier, with a portion fermented in old oak barrels (Bollinger's own foudres) before assemblage and further aging on lees.
