About the Wine

Vinification: Harvested entirely from the Estate Vineyards of Thacher Winery, the fruit was foot-stomped, and the juice left to soak on stems and skins for 24 hours before being whole-cluster pressed in a pneumatic bladder press. Juice was settled without sulfur or inert gas until fermentation began, naturally and spontaneously. Primary was concluded in a pressure tank where carbonation was naturally accomplished. 40% Grenache, 40% Cinsaut, 20% Viognier Élevage: The wine was raised for 6 months before being hand-bottled, unfined and unfiltered. This wine was crafted without the use of added enzymes, water, acids, tannins or nutrients. SO2 Levels: 0

Tasting Notes

Made in a hybrid “Methode Ancestrale”, Pétillant Naturel was the sparkling wine prototype that predated the Champagne Method. The style was never a victim of the pretension of its more famous sibling, although it has become fashionable in wine bars as an affordable, over-delivering alternative to Champagne. This estate-grown Grenache, Cinsaut, and Viognier blend kicks off with aromas of strawberry, watermelon, and cotton candy. The elegant bubbles carry a minerality on the palate, providing a beautiful touch to the strawberry and orange creamsicle flavors.
