About the Wine
2.1 tons of fruit, souced from the Homestead Hill Field Blend Block, were hand harvested on 8/25 and 9/7, at 20.1 and 23.2 brix. The block is planted to a collection of 11 different vareitals, each of which were widely planted before Prohibition. The two picks, with 50% wholeclusters, underwent 7-day cold-soaks until the fermentations began, naturally and spontaneously.
