Profile & Story

Chateau de Trinquevedel is an 18th-century estate on the edge of Tavel farming 32 hectares organically. This cuvee grows on Astien fluvial sand with quartz round pebbles over deep clay loam. The blend is Grenache 50%, Cinsault 20%, Clairette 12%, Syrah 10%, Mourvedre 5%, and Bourboulenc 3%: hand-picked and sorted grapes undergo a 24-hour cold maceration, gentle pressing, a blend of free-run and pressed juice, 24-hour cold settling, and 10-15 days of temperature-controlled alcoholic fermentation, followed by 6 months' aging in stainless steel vats.

Tasting Notes

Pink, raspberry-toned dress with an expressive nose of little red berries. The palate is very balanced and true to the nose, full-bodied with a long length; good acidity gives a tense finish and beautiful complexity — a fine, fresh, fruity, elegant Tavel.

Pairing Recommendation

Salmon gravlax, osso buco, and veal with olives, as well as cured meats, white meat, grilled fish with a light sauce, spicy dishes, Asian cuisine, and sweet-and-sour dishes.
