Domaine Gavoty, in Cabasse at the heart of Provence, has been farmed by the same family since Philémon Gavoty acquired the estate in 1806, with eight generations since. ‘La Cigale’ (named for the region's ubiquitous cicadas) is built from roughly equal parts Grenache and Cinsault with a touch of Carignan and Syrah.
