Gruet Winery is a family-owned sparkling wine house founded by the Gruet family, Champagne growers from France who planted vines in the high-desert Mimbres Valley of New Mexico. Their 'Sauvage' bottling is part of the winery's low-dosage 'Sauvage' line, made from 100% Chardonnay using the traditional (Champagne) method, aged sur lie for a minimum of 18 months with no dosage added at disgorgement -- a bone-dry style with roughly 50% less sugar than an average sparkling wine.
