Domaine Laroche, based at the historic Obédiencerie in Chablis, is one of the appellation's most storied producers, with roots tracing back over 1,000 years. The Saint-Martin cuvée is a selection from the finest historic terroirs of the Chablis Village appellation, grown on Kimmeridgian limestone soils and made from 100% Chardonnay. Fermentation and malolactic conversion take place in stainless steel (85%) and French oak foudre (15%), with a minimum of six months' aging on fine lees.
