Manincor is a biodynamic-pioneer estate in Caldaro, Alto Adige, run by Count Michael Goess-Enzenberg. Der Keil is sourced from the historic, monopole "der Keil" vineyard on the shores of Lake Caldaro - old, pergola-trained Schiava (Vernatsch) vines on sandy-clay, calcium-rich soil at 250m, among the warmest sites in South Tyrol; open-vat fermentation with about a week of skin contact, then 5 months on fine lees in large oak. 12.5% ABV, 0 g/l residual sugar.

Tasting Notes

Bright, soft ruby color; delicately fruity on the nose with cherry and toasted almond, juicy on the palate, light and elegant on a quaffable finish.

Pairing Recommendation

Classic with South Tyrolean cold-cut platters (speck), pasta, or anything built on tomato, garlic and olive oil.
