Il Censo is the small family estate of Gaetano Gargano, who farms organically at roughly 700 meters in Palazzo Adriano, a remote mountain village in south-central Sicily that has belonged to his mother's family for over two centuries. Gargano trained under Giampiero Bea, one of Umbria's most uncompromising natural winemakers, an influence evident across the estate's hands-off winemaking. Praruar -- a word meaning 'golden' in the once-locally-spoken Greco-Albanian dialect -- is made from 100% Catarratto, fermented with indigenous yeasts and left on its skins for two to three weeks depending on the vintage, with no temperature control. The wine is bottled unfined and unfiltered.
