Champagne Rene Geoffroy farms in Cumieres, a Premier Cru village of the Vallee de la Marne. Empreinte is the house's Blanc de Noirs, drawn from three historic south-facing plots -- Les Chalmonts, Les Barremonts and Les Pechers -- on clay-limestone soils with fragments of millstone flint, mid-slope at 160 metres on a 19% gradient, with vines over forty years old. The blend is 100% Pinot Noir. Grapes are hand-picked at optimum ripeness and sorted, pressed on a traditional Coquard press, and only the 'tete de cuvee' juices are selected. Vinification is by gravity, plot by plot, fermented with indigenous yeasts in oak barrels and tuns, then aged on lees for 72 months in cellar on laths. The wine is neither fined nor filtered; dosage is 3 g/l.
Tasting Notes
On the nose, a complex bouquet of aromas of red fruit, baked apple and hints of dried fruit. Airy, lively and nervous on the palate. With its balance of richness and freshness, this Champagne stands out. It has the depth and complexity to accompany a gourmet meal.
Pairing Recommendation
By virtue of its power, this Champagne complements the expressive flavours of gastronomic cooking remarkably well. Bresse chicken with morel mushrooms, quail with grapes or a fricassee of forest mushrooms harmonise perfectly, served at 11-12 C. It is also a fine match for roast poultry or mature cheeses.
