Profile & Story

Lieu Dit was founded in 2011 by Eric Railsback and Justin Willett to grow Loire Valley varieties in Santa Barbara County. The Sauvignon Blanc is 100% Sauvignon Blanc drawn from three vineyards in the far eastern reaches of the Santa Ynez Valley -- McGinley, China Blue and Santa Ynez -- across sandy loam, river cobbles and serpentine soils that share the tectonic history of the nearby mountains. The grapes are gently pressed and the juice fermented in both stainless steel tanks and old oak barrels; diversifying the fermentation vessels is intended to highlight the nuance each vineyard contributes. The wine is then aged in tank and old barrel for about six months and lightly fined with bentonite clay before bottling.

Tasting Notes

Smells like lime leaf, Meyer lemon, green apple and white flowers; tastes of wet stone, grapefruit and tarragon.

Pairing Recommendation

Enjoy with your favourite Thai takeout, a big healthy salad or a filet of salmon. Its simplicity also makes it a natural companion to briny, complex flavours -- oysters and salty popcorn included.
