Etienne Daulny farms 15 hectares across roughly 50 different plots in the Sancerre appellation, combining diverse soils - including clay, flint, Portlandian, and Kimmeridgian limestone - into his regular cuvée. Made from 40-year-old Sauvignon Blanc vines, the wine is fermented and aged in temperature-controlled stainless steel tanks with no malolactic fermentation, preserving freshness and vibrancy. Overall yields run about 50 hl/ha, typical for the appellation, with harvest entirely by hand.
