The Davault family has farmed at 'La Chaise,' near Château de Chenonceau in the Loire Valley, for seven generations; Christophe Davault took over the 57-hectare estate in 2004, on land first planted with vines by monks of the Priory of La Chaise in the 10th century. Their Touraine Sauvignon Blanc is sourced from the Clos des Roussettes vineyard in Saint-Georges-sur-Cher, on clay-limestone soils, and fermented at low temperature to preserve freshness and aromatic precision.
