Parés Baltà is a family-owned winery founded in 1790 in the Penedès region of Barcelona, Spain, and has farmed biodynamically since 2012 after being certified organic since 2002; in 2022 the estate was recognized as an 'Integral Producer' by DO Cava, controlling the entire process from harvest through bottling in-house. This Brut is the youngest sparkling wine in their range, blending the three traditional Penedès varieties — Parellada, Macabeo, and Xarel·lo — with Parellada from the highest vineyards lending freshness, Macabeo contributing fruit, and Xarel·lo adding body.
Tasting Notes
The wine shows a light, fresh, and citric character, with aromas and flavors of white flowers and orchard fruit such as green apple and pear. James Suckling described it as having a chalky nose with brioche and green apples, a creamy perlage, medium body, and subtle flavors.
