DAOU Vineyards, founded by brothers Georges and Daniel Daou on DAOU Mountain in Paso Robles' Adelaida District, is named for their father. Soul of a Lion is the estate's flagship Cabernet Sauvignon-based wine, aged for nearly two years in the winery's own DAOU 5-Year French oak barrels — staves seasoned in the elements for five years before coopering — and held for extended bottle maturation before release.
Tasting Notes
Displays remarkable intensity with dark, inky ruby-purple hues; abundant black cherry, blackberry, blueberry jam and black currant aromas interwoven with baking spice, sage and graphite lead to a voluminous palate of chocolate-covered blueberry, tobacco, mocha and toasted oak, with round, vibrant tannins carrying into a commanding finish.

Pairs well with grilled ribeye, braised short rib, or dark chocolate desserts.
